Recipe one - Norwegian Meatballs
(Kjøttkaker)
Ingredients Meatballs :
500 grams of Minced beef
1 onion - chopped
2 Tablespoons Potato Starch or Cornflour
Olive Oil or Butter
1/2 Teaspoon Nutmeg
1/2 Teaspoon Salt
1 Egg
Method:
Mix the Dry ingredients together before adding the egg, chopped onion and minced beef.
Form balls in your hand and pan-fry them until they are evenly brown.
Ingredients Gravy :
3 Cups of Beef Stock
1 Cup of Milk or Cream
50 Grams of Butter
1/2 Cup of Flour
Pepper to taste
100 Grams of Brown cheese
Method:
Mix all the ingredients and boil, stirring well. Serve with potatoes, mashed peas
and lingonberry.
Recipe Two - Swedish Mushroom Salad
(Svensk)
Ingredients :
1 Bunch of Kale
A punnet of white button mushrooms
Dressing
1 tablespoon of red wine vinegar
1/4 Cup salad oil
Salt & pepper to taste
Method:
Slice the mushrooms into thin slices and combine with shredded or sliced kale leaves.
Mix the red wine vinegar and salad oil. Add salt and pepper to taste.
Mix together and leave for 10 minutes for the flavours to combine, and enjoy.
Recipe Three - Norwegian Creamy Cake
(Bløtkake)
Ingredients Sponge :
5 Eggs
2 Cups of Sugar
2 12 Cup of Flour
2 Heaped Teaspoons of baking powder
Ingredients custard :
Apple juice
3 Tablespoons strawberry jam
5 Tabelsoons Vanilla custard
4 Bananas - mashed
1 1/2 cups of cream - whipped
2 Tsp sugar
To decorate - Pineapple or other seasonal fruit
Method:
To make the cake, preheat the oven to 180 degrees
Mix the eggs and sugar until light and creamy.
Sift in the flour and baking powder
Pour the batter into a prepared springform cake pan and place it on a baking tray.
Bake for 30 - 40 minutes
Remove from the oven and allow to cool completely
Cut the cake into 2 or 3 layers horizontally
Place the bottom layer on a plate and soak it in a thin layer of apple juice
Mix the custard, jam, and bananas, and spread them over the bottom layer
Repeat for each layer, except the top layer.
Place the final layer of the cake on top and top with whipped cream.
Decorate the cake with pineapple, strawberry other other seasonal fruit.
